The JAPAN Holdings Co., Ltd. is proud to present a special gastronomic event at Nature MIYAGAWA, a private resort in Hida, Gifu — where Japan's top-tier chefs unite with local Hida producers for an unforgettable two-day culinary journey.

Through three distinct dining experiences made possible only at the source, we invite the media to witness and share the rich food culture and natural abundance of Hida.

Three Distinct Dining Experiences in One Stay

There is no pre-set menu. Each dish is improvised by our elite chefs using the freshest vegetables harvested that morning, and the finest locally sourced meat and fish — creating a dining experience that exists nowhere else.

Day 1 — Dinner

Chef's Improvisational Course Dinner

A multi-course dinner crafted on the spot by top chefs. Guests enjoy an unhurried evening, savoring each dish while mingling with the producers and fellow guests.

Day 2 — Breakfast

A Fermentation-Themed Japanese Breakfast

Experience the origins of Japanese food culture through Hida miso, rice, and traditional pickled vegetables — a morning meal rooted in the art of fermentation.

Day 2 — Lunch

Farm-to-Table Harvest Lunch

Walk into the fields, pick the vegetables yourself, and taste them on the spot. By experiencing where food grows — not just where it's served — guests discover the true richness of Hida through all five senses.

Chef Yuta Shimizu

Yuta Shimizu

NEIGHBIRD / MEMOIRE — Hida-Takayama

Born in 1991 in Takayama, Gifu. After graduating from the Tsuji Culinary Institute France, he trained at a two-Michelin-star restaurant in France. Upon returning to Japan, he gained experience at the three-star Château Restaurant Joël Robuchon and TIRPSE — which earned its star in record time. At 28, he became head chef at TIRPSE HONG KONG. At 31, he returned to his hometown of Hida-Takayama to open NEIGHBIRD, followed by French restaurant MEMOIRE in 2025.

Chef Yasushi Mikami

isai — Osaka

Starting his career at a guesthouse in Fukui, he went on to work at luxury hotels in Hokkaido and Tokyo before moving to France at age 26, where he helped launch a Paris bistro and trained at starred restaurants. After returning to Japan, he served as a personal chef to elite athletes in Spain and Greece, then became head chef at a Fukui restaurant. He currently helms isai, a restaurant in Osaka operated by a direct-from-farm greengrocer.

Yakitori Nikawa

Owner-chef of Yakitori Nikawa. While training in sushi, he took over the family yakitori restaurant Nikawa as its second-generation owner. Five years later, he transformed it into a course-only yakitori restaurant featuring "Nikawa-dori" — a breed of chicken developed in partnership with a local poultry farm.

For elite chefs who spend their days at the stove, opportunities to visit local production sites across Japan are limited. As a result, encounters with rare ingredients unavailable on the market — or produce at its absolute peak of freshness — are far and few between.

Through this event, I hope to create meaningful connections between the culinary world's finest and the dedicated producers of this region — connections that give birth to something entirely new. I also hope that hearing "I've never had an experience like this" from food lovers visiting from Tokyo and beyond will give the people of Hida a newfound pride in the land they call home.
